Red water chestnuts, a famous specialty for more than a century, have four spiny angles and resemble silver ingots in shape. Fresh and tender red water chestnuts can be consumed as a fruit, while mature ones are better to eat boiled. Ripe red water chestnuts have high nutritional value and can also be used as ingredients for dishes.

There are about 67 hectares of water in Sheshan growing red water chestnuts. In summer and autumn, there are many street vendors peddling red water chestnuts, which are popular with tourists.
